Nominees announced for the Eat-Japan Sushi Awards at HYPER JAPAN 2014

HYPER JAPAN, the UK’s biggest celebration of Japanese culture, cuisine and cool, returns for 2014 even bigger and better than before. Transforming Earls Court into a bustling hub of excitement the event will see diverse exhibitors, workshops, performers and fans come together to bring traditional and contemporary Japan to the heart of London.

For foodies, the Eat-Japan Sushi Awards are without a doubt the highlight of the three-day event. Sponsored by KIKKOMAN, S&B and Yutaka, and hosted exclusively at HYPER JAPAN, the Sushi Awards pitches professional chefs in the UK against one another, offering them the chance to battle it out to win ‘Sushi of the Year’. HYPER JAPAN is excited to announce that the following chefs from Japanese restaurants in the UK will be participating at this year’s Sushi Awards:  
Daniele Codini - Senior Sous Chef at Yashin Ocean House 
Daniele Codini trained and began his career in his native Italy before completing further training at La Tour D’Argent and L’Atelier de Joel Robuchon in Paris. He then moved to The Fat Duck where he spent three years learning new techniques and developing a new approach to cuisine. Now the Senior Sous Chef at Yashin Ocean House, a Japanese restaurant with a modern twist focusing on the ‘Head to Tail’ dining concept, he combines his innovative approach with his classical training to create delicious riffs on Japanese fish cuisine. 

Eduardo Aguiar - Head Sushi Chef at Chisou Knightbridge
Eduardo Aguiar followed a traditional path to becoming a sushi chef, learning the trade under the tutelage of some of London’s leading sushi chefs after working his way up from dishwashing in the back kitchen. NowHead Sushi Chef at Chisou Knightsbridge, an oasis of Japanese tranquility with a menu complemented by one of London’s most extensive sake lists, Chef Aguiar is committed to creating exceptional sushi, carefully crafted to delight his diners. 

Wojciech Popow - Sushi Chef at Roka

Wojciech Popow began his career as a bartender and mixologist before an encounter with homemade sushi sparked his interest. After learning as much as he could about sushi independently, Chef Popow became a sushi chef. Now working at Roka Charlotte Street, an award-winning restaurant specialising in robata-yaki cuisine in which ingredients are cooked to succulent perfection over an open charcoal grill, he is constantly striving to create inspiring and memorable dishes. 

Jaturavit ‘Son’ Saysensa - Sushi Chef at Chino Latino
 Son has been mastering the art of sushi for the past nineteen years. Beginning his career in his home country of Thailand, Son then moved to Saree Restaurant in Tel Aviv where he met the founder of Chino Latino, a pioneer in fusion cuisine and a leader on the culinary landscape. Son came to the UK for the inception of Chino Latino where he started working at the first outlet in Nottingham where he continues to work today. One of Son’s career highlights was winning the Eat-Japan 2006 Original Sushi Competition with a soft shell crab and chilli nigiri.   

Tsvetan Gerganov - Head Chef at Feng Sushi
Tsvetan Gerganov was born in Bulgaria and graduated from the Professional Culinary School in 2003. Beginning his career under the guidance of various mentors at international restaurants in Sofia, he moved to London in 2012 to begin a new culinary challenge at Feng Sushi, one of London’s most popular and award winning chains. During his time at Feng Sushi, Tsvetan has further developed his knowledge and skills in Japanese cuisine and is now Head Chef at the Borough Market restaurant.   

The 1500 visitors to the Sushi Awards will have a chance to taste each of the five unique sushi creations and ultimately decide who will be crowned the UK Sushi Roll Champion for 2014.

As a contest between some of the top sushi chefs in the country, visitors will have the chance to see how real professionals go about making world-class sushi, guaranteeing an amazing culinary experience.
