Following a successful partnership last year, Hayaca Restaurant returns once again to Amàre Beach Hotel Marbella, as well as opening at the brand-new Amàre Beach Hotel Ibiza, when it opens its doors in July 2019. Open from mid-June to mid-September in Marbella, Hayaca will be in the expert hands of Michelin-starred chef, Mauricio Giovanni. Bringing his free cuisine philosophy to these restaurants, Mauricio will create fusions of flavours from different Latin American countries, serving up authentic dishes like Colombia style chipá with suero and hogao (cheesy bread with a traditional sauce), Bream with a tart banana cream or fried plantain with prawn mayonnaise. For dessert, dare to sample tapioca with canchanchara and psidium ice cream. Irresistible!
Hayaca’s original and delicious cuisine will incorporate local products in both destinations and will showcase contemporary versions of classic Latino dishes. Diners can also look forward to show cooking and a lively cocktail bar. In both destinations the interiors and vibe are unmistakably Latin American, with colourful long benches, vibrant cushions and table linen, tropical greenery and cacti, wicker baskets and chairs. Diners can relax while swaying to the sound of the best Latin beats and enjoy picture-postcard views of the Mediterranean in both Marbella and Ibiza.
In Ibiza, Hayaca will be open for the entire season. The restaurant warmly welcomes all hotel guests (it is included within the half board meal plan) and non-hotel residents.
Cocktails by Diego Cabrera
2019 will see the introduction of a brand-new cocktail menu at both hotels, created especially for the destinations by one of Spain’s most acclaimed bartenders, Diego Cabrera. Previously voted ‘Barman of the Year’ Diego has created a list featuring both the innovative and unique to the classic and forgotten. Options include everything from the fruity, the refreshing and the spicy, with signature cocktails such as the Orange Blossom, featuring cachaca rum, passion fruit puree, orange blossom water, sugar syrup and lemon & lime soda. With a nod to the current gin renaissance, the Tonico Sprenger will pair gin infused with cardamom, cucumber, cinnamon, lemon juice and ginger beer for the perfect sun-set tipple. Even those looking for a detox are catered for with a wide range of mocktails, including the Bergamont Gold featuring apple juice, pear puree, bergamot and pomegranate molasses.
Guests enjoying the Marbella sun can experience 360-degree vistas at Belvue Rooftop Bar with views over the Mediterranean Sea, Marbella Old Town and the majestic Sierra Blanca. Relax in the evening as the sun sets before dancing the night away to cool Latin beats with their live DJ, cocktail in hand.
