Château De Montcaud is delighted to announce the opening of a new gourmet dining venue, Restaurant de Montcaud. Located in the château’s Le Mas building, which formerly housed the estate’s stables, the newly opened restaurant offers guests seasonal cuisine, celebrating the best of the region with locally sourced, quality ingredients. Ambitious Head Chef Matthieu Hervé aims to put Château de Montcaud on the culinary map with the new opening and his inspirational creativity.


Restaurant de Montcaud offers guests the choice of a delicious, seasonal menu, with dishes including scallop carpaccio served with apples grown in the neighbouring estate, succulent lamb and sea bass with clams and brussels sprouts. Those looking to sample a variety of flavours can opt for the menu degustation, which regularly changes ensuring returning diners continue to be surprised.

Hervé’s refined cuisine is a revelation for all gourmets: a twist added to classic dishes results in modern French cuisine at its finest.  Savour the sea bream ceviche with trout eggs and avocado, seasonal venison with fresh mushrooms, and finish with a decadent chocolate and caramel dessert or your pick of the cheese cart compiled by up-coming cheese master Vincent Vergne.

Wine connoisseurs looking to discover new tastes and hidden gems will not be disappointed by the cellar at Restaurant de Montcaud. All dishes are expertly paired with French wines from most of the famous wine regions. Special focus is placed on local finds sourced from small wineries, where the owners are friends of the château rather than acquaintances. Enjoy a glass of local Côte du Rhone looking out the restaurant’s large windows with breath-taking views of the château’s five-hectare park and a charming courtyard. During warm summer evenings, guests can choose to dine under the stars, listening to the calming sounds of the surrounding nature.

Normandy born Hervé brings his affinity for fish and seafood to Restaurant de Montcaud. Just an hour from the coast, the new restaurant is one of the few in the region to offer cuisine terre et mer, giving guests the opportunity to enjoy both top-quality meat and fresh fish. With a wealth of experience working with some of the best, Michelin-starred names in the business, 32-year-old Hervé is looking to make his mark with the new Restaurant de Montcaud. The talented head chef aims to surprise and delight guests with imaginative dishes and he is continually honing his skills in his own private “gourmet laboratory”, a fully fitted test kitchen in the estate’s former pigeon loft.

Throughout December, Restaurant de Montcaud is open for dinner from Wednesday to Saturday each week as well as for special events over the festive season. Opening times will be adjusted in March by the team at Château de Montcaud. Situated in the town of Sabran, nestled in France’s rural Cèze Valley, the 29-bedroom boutique hotel is also home to Bistro de Montcaud, a celebrated eatery where guests are welcome for hearty breakfasts, laid-back lunches, high-tea, evening cocktails or lively dinners. Simple but perfectly executed classic French fare, such as cote de boeuf or moules frites, is served in a relaxed and informal atmosphere.
