Exclusive Cheshire resort appoints new chef to oversee all cateringeThe award winning Mere Golf Resort & Spa has appointed Mark Walker as Executive Head Chef, underpinning its commitment to offer guests, customers and members the best experience. Walker joins the resort from neighbouring Rookery Hall where he held the position of Head Chef since 2009.
The 2 AA Rosette rated culinary king has spent over 15 years in the industry and brings a wealth of experience and knowledge to The Mere Golf Resort & Spa, having worked in some of the best kitchens at luxury hotels across the country. Walker will be responsible for the day to day running of the all of the kitchens, as well as creating and designing menus for the resort from banqueting, meeting and events to the hotel’s renowned Brown's eatery, Club Lounge and Spa restaurant.
The Scotland born chef, who is passionate about provenance and incorporating local produce into his menus, is delighted to have joined the resort rated as Cheshire Life's Hotel of the Year in 2013.
He said: "I am thrilled to have joined such a highly acclaimed and established resort, with a great heritage and reputation both locally and nationally. I am looking forward to the challenge of developing the team and building on the great work done so far to ensure The Mere dining experience is the best the region has to offer."
To mark his arrival, The Mere Resort & Spa is launching a Valentine themed six course gastro tasting menu for £59. Dishes include a starter of roast artichoke and asparagus velouté followed by risotto of west Cornish lobster. For main, a medallion of prime beef fillet, foie gras, creamed savoy cabbage, potato rosti, confit of shallots in a black truffle and port sauce. For dessert, a selection of lime cake, rhubarb sorbet and liquorice followed by coffee and lollipops. Available to residents and guests from 14th-16th February in its famous Brown's restaurant, couples looking for something extra special this Valentines will not be disappointed.

In addition to the taster menu, the resort is promoting the Rose Afternoon Tea to guests who are after a more relaxed and informal celebration. Available from 13th February until 28th February and from £17.95 per head, it's an ideal treat for Valentine's Day.
