All 17 participating chefs, from IACC member properties across the UK, were presented with basic pantry items along with a ‘mystery basket’ of produce.
They were given 30-minutes to prepare, create and present their plates to the judges. Chef Claudio Costea’s winning dishes included poached monkfish tail and sautéed king prawns; polenta and asparagus roll with samphire, asparagus and shrimp sauce.
Claudio will now compete in the European Chapter Copper Skillet final, taking place in Lisbon on 6 October 2018 at the IACC Europe Knowledge Festival. The winners of the European cook-off will go on to compete with other international chefs from IACC chapters around the world at the IACC Americas Connect Annual Meeting in early 2019, where the 15th Global Copper Skillet Champion will be named.
Christian Fratieanu, also from De Vere Oxford Thames, placed as runner-up in the Junior competition.
