Amadeus’ Catering Manager Craig Hancox worked closely with Clare Evans, Events Manager for the Treasurers Department to understand their requirements for the dinner for 200 VIP guests including senior members of the Conservative Party.
Amadeus’ Executive Head Chef Simon Hellier and his talented team of chefs at the ICC were responsible for creating the innovative menu. A tasting session was held prior to the event to ensure the dishes met the client’s expectations in terms of quality, presentation and taste.
The final menu comprised of fresh & smoked salmon with pea’s pannacotta salad, lime cured shallots & tempura seaweed crumble; zaatar fritter of pressed Moroccan lamb shoulder & sweet potato dauphinoise, griddled courgette, minted peas & beans with feta cheese; artichoke heart tortellini with chargrilled asparagus, crumbled Bosworth Ash topped with oregano focaccia (v) and layered apple and caramel tartlet with vanilla pod ice cream & toasted hazelnuts.
As well as providing hospitality for exclusive events during the Conference, Amadeus also created a number of retail catering concepts for the 14,000 delegates visiting the venue over the four days. The team spent nine months planning and bringing to life three new concepts Wok’s Cooking, La Cocina Mexicana and The Coffee Corner, in addition to the existing Starbucks and Oak Kitchen offering already at the ICC. The team also reinstated The Ice White Bar, a popular concept from the 2012 Conference, serving drinks and snacks in a stylish setting at the heart of the venue.

The ICC has long been recognised as an industry leader in event catering due to its determination to constantly push boundaries and we were pleased to be able to offer delegates three new pop-up retail concepts this year, as well as creating tailored dishes for private dinners and elite events.”
