Haute cuisine at Kameha Grand Zurich

Kameha Grand Zurich Hotel, Autograph Collection's first property in Switzerland has positioned itself as not only a design hotel, but a new gourmet destination in Zurich. With three unique restaurant offerings, L’UNICO the Italian restaurant focuses on traditional Italian cooking, prepared in the open kitchen with the freshest ingredients. Meanwhile YU NIJYO, the Japanese fine dining restaurant offers traditional Swiss Appenzell patterns on the walls featuring Japanese scenes, reflecting the unique merging of Swiss and Japanese influences.

YU NIJYO will offer YU SUSHI LUNCH CLUB during the day and YU NIJUO fine dining during the evening. The remarkable cuisine offered by both restaurants is thanks to a team of highly respected Michelin starred chefs including Norman Fischer, who joins the team after experience with multiple Michelin starred restaurants and Igino Bruni who offers handmade pasta from the heart and the most delicious combinations that only Italian cuisine can provide. Both restaurants will also be offering alternative lunch menus including L’UNICO @HOME and YU SUSHI LUNCH CLUB, in addition to Brunch at L’UNICO which is available on Sundays.

YU NIJYO and Chef de Cuisine Norman Fischer
Norman Fischer will head the kitchen team at YU NIJYO, the Japanese fine-dining restaurant at Kameha Grand Zürich. Working alongside Raoul Mühlan as Executive Chef, the team provides culinary excellence. Fischer’s background offers an incredible selection of some of the best kitchens in the world from Victor’s Gourmet Restaurant Schloss Berg, a three-Michelin star restaurant where he worked under Christian Bau, to three years as sous chef with Dirk Luther at the “Restaurant Meierei Dirk Luther” in Glücksberg, which boasts two Michelin stars. In his first position as chef de cuisine at the gourmet restaurant “La Terrasse” at the Parkhotel Bremen, his talent led to his inclusion in the league of chefs with highest creativity and best possible preparation, the Gault Millau’s highest class for the most outstanding chefs. One star in the Guide Michelin, 17 points in the Gault Millau and seven pans in the Gusto as “best restaurant in Bremen” represent Fischer’s incredible achievement to date and the experience he will bring to YU NIJYO.  

To complement the fine-dining evening, YU NIJYO is offering an exciting new lunch concept and YU SUSHI LUNCH CLUB, taking the incredible cuisine and providing delicious day time offerings. YU SUSHI LUNCH CLUB will offer a delightful array of sushi, nigiri and soups.  

L’UNICO and Head Chef Igino Bruni
In Hawaiian, Kameha means “the unique”. In Italian, the word is “L’UNICO”. A unique name for a special concept and a chef who lives for his profession. Igino Bruni brings to Kameha and L’UNICO 18 years of extensive gastronomic experience. Bruni has enjoyed positions as chef de partie in the Seven Group in Ascona under the leadership of Ivo Adam, at La Brezza in Ascona, the Carlton in St. Moritz and the Kulm Hotel in Arosa. The head chef considers the highlight of his career to be his time as sous chef under Armin Amrein in the Seehof-Stübli in Davos, which led to his 17 Gault Millau points and Michelin star.  

L’UNICO restaurant focuses on traditional Italian cuisine, offering an incredible selection of homemade pastas. Igino Bruno prides himself on creating the elements of each dish by hand and the menu itself offers a simple selection process focusing on fresh pasta, delicate sauces and special extras to give additional flavour to the pasta. All dishes are prepared at the live-cooking station and create a warm and welcoming atmosphere in which to enjoy these home cooked delights.

Igino Bruni knows precisely what he wants for his L’UNICO at Kameha Grand Zurich: “My guests should feel like they are holidaying in Italy,” says Bruni. “The aromas, tastes and atmosphere in L’UNICO should give them a sense of the Italian way of life, la dolce vita.” His aim he says is to provide “the unique sense of the taste, the indulgence, it should put a smile on their faces, so that they go back to their daily lives feeling good.”

Take a piece of L’UNICO with you from April 6th 2015! L’UNICO @HOME will offer handmade pasta and sauces packed with the freshest ingredients to take away and make at home. Complete with an instructions flyer showcasing a simple but sumptuous recipe for 2-4 people, take away your taste of Italy. Prices vary depending on selection.  

L’UNICO will also be offering an outstanding Brunch, which will take place on Sundays from 11am-3pm and is priced at 69CHF/£48 per person.
