Celebrate St Lucia’s Cocoa Bean and Chocolate Heritage Month at Jade Mountain’s Chocolate Laboratory

This August will see Saint Lucia celebrate its famous Coco Bean and Chocolate heritage with a month of dedicated activities and tours that honour the island’s rich history of cocoa production.
Throughout Chocolate Heritage Month the luxurious Jade Mountain and Anse Chastanet hotel is inviting sweet toothed guests into the resort’s Willy-Wonka style Chocolate Laboratory to delight in Sensory Tasting experiences and chocolate-making classes.

Avid chocoholics will be welcomed to join guided tours around the resort’s enchanted Emerald Estate and Chocolate Laboratory to witness the complete cycle of ‘Tree to Bar’ production.  

For the past three years, Jade Mountain, St. Lucia’s only ‘bean to bar’ organic boutique chocolate maker within a five star resort, has hand-crafted Emerald Estate Chocolate for the enjoyment of its guests. With the recent opening of the hotel’s Chocolate Laboratory, guests are now able to not only taste, but participate in the alchemy of chocolate making for a super-sweet hands-on experience like none other.  

If Chocolate Sensory Tastings and chocolate making sessions are not enough to satisfy chocoholics, the stunning resort will welcome guests to fully indulge with chocolate inspired spa treatments at Jade Mountain’s spa or in the privacy of guests’ sanctuaries.  The locally grown cocoa bean has long been touted for breaking down harmful free-radicals.  

Chocolate spa treatments available include the ‘Chocolate Citrus Body Polish’ which combines the anti-oxidant and hydrating properties of chocolate with the rejuvenating and cleansing properties of citrus. Treatment begins with a Chocolate Citrus Sugar polish followed by a rich layer of Body Chocolate Wrap and finally a splash of Chocolate Body Milk, to leave your skin exfoliated, glowing and moisturised.  

Chocolate lovers can be further enticed by chocolate inspired dishes and tasty cocktails in the resort’s restaurants and bars, available all year round. Additional year-round chocolate experiences available at Jade Mountain include:
Chocolate Sensory Tasting: A journey through the flavour palate of cocoa and chocolate. Guests begin the Chocolate Sensory Tasting with the cocoa bean, which is used within the very first step in chocolate production, and later taste the strongest type of cocoa mass, while sampling all steps in between. As a culmination of the sensory tasting session, guests get to sample homemade truffles and a variety of Emerald Estate Organic Chocolate bars. Tuesday from 10:00 - 10:30 am in the Emerald Restaurant. Offered complimentary to resort guests.  

Discover Chocolate: Taking the Chocolate Sensory Tasting a step further, guests participate in the actual making of chocolate in the Chocolate Lab. With Director of Pastry, Wouter Tjeertes, guests will learn the basic techniques of making chocolate, tempering chocolate, creating their own fudge and making personalised chocolate bars. The class is hands on so guests need to be prepared to get their hands dirty and leave the lab covered with chocolate! Tuesday and Thursday from 10:30 - 11:30 am in the Chocolate Lab.  $45/£30 per person; Minimum two, maximum six persons per session.  

The Emerald Estate Tree to Bar Tour: Guests will visit the Emerald Estate for a Cocoa Tour to experience the complete cycle of “Tree to Bar” production, learning about the history of chocolate in the Caribbean and the production process. At Emerald Estate, guests will first witness the natural side of cocoa including tasting raw cacao while discussing the fermentation, sun drying and polishing of the beans. Guests will then return to the Chocolate Lab, where the host will elaborate on the technical part of making the perfect chocolate bar. This two-hour guided experience takes guests through cocoa bean roasting, grinding and conching techniques to create the ideal snap and shine. Along the way, guests will enjoy an invigorating cup of local cocoa tea and the Emerald Estate’s organic chocolate bars that range from 60%, 70% and 92% Bittersweet. Guests will receive a Bar of Emerald Estate Organic Chocolate as the farewell souvenir to take home. Monday from 9:00 - 11:00am, Wednesday from 2:00 - 4:00pm, Friday from 9:00 - 11:00 am. $75/£50 per person. Minimum two, maximum six persons per session.  

Chocolate Delight: The cocoa bean which grows in Soufriere has long been touted for breaking down harmful free-radicals and now Jade Mountain has taken the cocoa treatment to new exotic heights. Skin will be revitalised with the chocolate’s anti-oxidant properties whilst the sense for sweetness will be indulged with this delightful chocolate beautification experience. Decadently warm chocolate is applied in layers, stimulating endorphins in the body and adding minerals to the skin to awaken the senses and bring them into pure harmony. The chocolate caresses the skin whilst cooling in temperature allowing guests to relax and leave feeling fresh and revitalized. 60 min, $150/£101 per person.  

Nightly rates at Jade Mountain start at US$ 1,275 (approx. £859*) in a Sky Sanctuary.  Price is based on two persons sharing, all rates are subject to 8% tax and 10% service charges.
