Payne and Gunter celebrate a decade of catering The BRIT Awards

Payne and Gunter, one of London’s leading event caterers for unique and unusual venues, is celebrating ten years as the official caterer to The BRIT Awards, ahead of this year’s ceremony on 19 February. Payne & Gunter is a business of Levy Restaurants UK, the market leader in sports, leisure and arena catering, and official catering and hospitality provider at The O2.

Following a successful tender in 2004, Payne and Gunter, has worked closely with the organisers BPI to develop the ceremony into the prestigious event it is today. Catering for the BRITs is a role that comes with high-demands and specific time constraints – all three courses have to be served within seventy minutes to 4,000 guests – but with ten years of experience and meticulous planning, Payne and Gunter have the task down to a fine art.  

The planning process starts in September with several tastings taking place to design the final menu. During the development phase, more than 50 highly-skilled chefs work over 2,300 man-hours to produce the menu which showcases the best of British produce with a contemporary twist. On the night, over 550 front-of-house employees, 60 chefs, a 40-strong management team and seven 

lorries of catering equipment, will ensure the food is served without a hitch.  

In order to create this year’s elegant menu, Payne and Gunter will use 132kg of Jerusalem artichokes, 2,500 rumps and 160kg of shoulder of the finest British lamb and 120litres of English double cream. 4,000 bespoke tiny dark chocolate cups and teaspoons will be handmade for the dessert.  

Every year Payne and Gunter delivers menus with precision and attention to detail, the dishes throughout the decade include, a trio of woodland mushrooms; seared fillet of English beef, with slow cooked beef hot pot; and a blackberry and apple macaroon, with apple and blackberry salad and sorbet. Some of the more daring selections feature guinea fowl supreme with pickled ginger, wasabi champ and baby asparagus; and a chocolate box filled with space dust, chilli, thyme and mint truffles.
