Agnar Sverrison & Ricardo Costa collaborate on an exclusive menu for a very special evening at one of London’s finest restaurantsTaste Portugal London, the Portuguese Tourist Board’s increasingly in-demand gourmet initiative, returns on Monday 23rd February at 7pm to Texture for a six course menu created by the restaurant’s very own Agnar Sverrisson and one of Portugal’s most highly acclaimed chefs, Ricardo Costa, from The Yeatman Hotel in Porto.
Taste Portugal London is delighted to be collaborating with Wines of Portugal who have provided wines from Portugal’s leading wineries to be showcased in the wine pairing, as chosen by Taste Portugal London’s Head Sommelier, Antonio Lopes. Lopes is one of the world’s leading authorities on Portuguese wine as confirmed with his recent nomination as one of Portugal’s Best Sommeliers, and can usually be found as sommelier of the five star luxury hotel, Conrad Algarve.
Each dish from the six course menu will be alternately prepared by the two chefs, each priding themselves on the freshness and quality of their exquisite ingredients – key in traditional Portuguese cuisine. The credentials of each chef are equally impressive. Agnar Sverrisson, affectionately known as Aggi, hails from Iceland and has trained and worked at a number of well-known Michelin starred restaurants, before launching Texture with Xavier Rousset in 2007 to rave reviews. It was awarded with a Michelin star in 2010. The duo’s Midas touch continued with the opening of specialist wine bar 28º – 50º on Fetter Lane. Due to its immense popularity, two sister venues were subsequently opened in Marylebone and Mayfair. Sverisson famously bans butter and cream from Texture, favouring cleaner and lighter flavours that will be experienced on the Taste Portugal London evening.
Ricardo Costa is Executive Chef at The Yeatman Hotel, the first Michelin starred restaurant in Porto, where he is responsible for two kitchens. Under his lead, the Gastronomic Restaurant has earned a Michelin star in the 2012, 2013 and 2014 Guides. Ricardo still employs tricks of the trade which he learned from his grandmother and are still the heart and soul of Portuguese cuisine. Costa’s imaginative dishes focus on the traditional flavours of Portugal, which he reinterprets and presents with contemporary flair.
