Hawksmoor's Richard Turner to head up signature restaurant at Ibiza's new The Ushuaïa Tower

Having introduced London to authentic steak restaurants with the award-winning Hawksmoor, executive chef Richard Turner now brings something completely new to the Ibiza dining scene at Montauk Steakhouse at The Tower, the latest project from the ever evolving Ushuaïa brand.

Rising majestically above Ibiza’s Playa d’en Bossa beach and providing a more intimate and tranquil experience than famous next door sibling The Ushuaïa Club, the eight-floor The Ushuaïa Tower will set new standards when it opens at the end of May. However, it is not just the cutting edge, elegant rooms and suites that will set this hotel apart; an exciting and eclectic line-up of eating and drinking options, led by Montauk, are similarly designed to appeal to the most discerning of tastes.

Under Turner’s guidance Montauk will be the first world class steakhouse not just in Ibiza, but in the whole of Spain.  Prime aged beef from the most renowned producers in Iberia, Nebraska and the UK will be perfectly cooked over a real fire charcoal grill.  

Montauk will feature a salt chamber built from Himalayan salt bricks.  The salt, together with a combination of temperature, humidity and light, results in a totally unique, sweet and flavoursome dry-aged meat.  

Porterhouse, Prime Rib, Rib-Eye and other popular cuts will be served alongside an array of speciality side dishes inspired by the great steak houses of New York.  

Diners can select their meat from the salt chamber, whilst a first-class wine cellar will further ensure a true international dining experience. In addition, a takeaway butcher service will allow diners to savour the inimitable Montauk offering in the privacy of their own home.  

Turner, who started under Michel Roux at Le Gavroche before working with Marco Pierre White for six years, was one of the first chefs in the UK to state the provenance and breed of beef on his menu. With his unparalleled knowledge and experience, Turner is ideally placed to introduce the concept of a high-end quality steak restaurant to the island.  

“Spain is now ready for its first true steakhouse and I can’t think of a better place to launch Montauk than at The Ushuaïa Tower,” says Turner. “Even though Ibiza has some wonderful authentic grill restaurants, Montauk will bring a truly international restaurant experience to Ibiza for the first time – something that the calibre of guests at The Ushuaïa Tower, along with an ever increasing discerning local clientele, expect at this level.”  

Montauk will also feature a world class Cocktail Bar offering a selection of classic and bespoke creations, together with a small cigar lounge area serving cigars, rare Bourbons and dark spirits in classic club-style comfort.

In addition, guests at The Tower can enjoy the culinary delights and superbly curated wine list of The Oyster & Caviar Bar, located adjacent to the spectacular infinity pool. Here a wide selection of oysters, together with caviar, seafood and salads, will be served alongside perennial favourites such as lobster BLT and homemade burgers. The Infinity Cocktail Bar will also be the perfect spot to imbibe delicious cocktails, specialty vodkas, champagnes and fine wines.

All cocktail menus at The Tower have been created especially for Ushuaïa by Chris Edwardes. Widely acknowledged as one of the world’s great mixologists, Chris’ accolades include Outstanding Achievement Awards from both Class and Theme magazines.

This exemplary food and drink offering continues next door at The Ushuaïa Club, where the Minami Japanese restaurant has been making waves since Ushuaïa launched back in 2011. Here can be found the best fusion cuisine on the island, including such signature fare as Scallop ceviche “Minami style” and Cod in miso pil-pil sauce with mashed sweet potatoes & tobiko.

Meanwhile Ushuaïa’s iconic beachfront restaurant, Ushuaïa Beach Club, with its mix of classic Mediterranean and fusion dishes, provides a sophisticated backdrop to live DJ sets and the island’s coolest chill-out music.
