Join one of Scotland’s leading chefs Paul Wedgwood and expert foragers as they take you on an outdoor culinary adventure. Passionate forager and chef patron of Wedgwood the Restaurant, Paul will lead a tour foraging for the very best wild seasonal ingredients in the countryside near to his award winning restaurant on Edinburgh’s historic Royal Mile.
Wild foraging is the ultimate in “local” and “seasonal” produce and is guaranteed to reawaken your senses so you gain a greater appreciation of your environment and the provenance of ingredients.
On this one-day course you’ll uncover a secret world of natural edible possibilities and discover how to identify edible leaves, fruit and fungi. After a morning in the wilds of Midlothian you’ll return to the kitchen for a masterclass in how to prepare the freshest of local ingredients. The masterclass will be followed by the lunch you have just prepared along with accompanying wines.
Or add a competitive element for a unique team building experience. Battle against the wilderness and each other to gather a harvest of foraged ingredients. Back in the kitchen you’ll have your very own “MasterChef” competition where each team will be given a hamper of mystery ingredients to prepare the finest foraged lunch under the guidance of Paul, before pairing your courses with wine from Wedgwood’s cellar with the help of co-owner Lisa. Not only does everyone get to enjoy the fruits of their labour, but the winning team will be awarded the Wedgwood Wild Forager Award to remember the day and their accomplishment.
What You Can Expect On the Day
10:00 – 10:30 Introduction
A basic run through of health and safety concerns, how the day will pan out, and an introduction to foraging and its benefits to course participants.
10:30 – 14:00 Wild Food Adventure
During this session you will learn how to identify numerous wild edible plants (a minimum of 20) and how to cook and prepare them, how to sustainably forage, and experience how foraging reconnects you to landscape and the natural world.
14:00 – 14:15 Break
14:15 – 15:45 Wild Dining Room
After the forage you will return to a professional kitchen for a masterclass in preparing foraged ingredients, after which you’ll enjoy the lunch you just prepared with accompanying wines.
15:45 – 16:00 Winding Up
Group feedback, experiences and what participants have gained from the day (and judging if you go for the competitive option)
