He restored the old, elegant house where guests can also enjoy an authentic Mediterranean cuisine. Since 2006, the Michelin Guide has awarded the restaurant with one Michelin star.
Nicolas Pierantoni – was born in Brignoles and grew up in the village of La Celle. When he was a teenager, his dream was to work at L’Hostellerie de l’Abbaye de la Celle and, as soon as he finished his studies, he joined the team that opened the establishment in 1999. Three years later, Alain Ducasse sent him to the Louis XV, his restaurant in Monaco, where Nicolas learned from the Executive Chef Franck Cerutti. He returned to L’Hostellerie de l’Abbaye de la Celle in 2006 as the sous-chef of Benoit Witz; in 2016, Alain Ducasse appointed him as Head Chef.
Dominique Potier started his career as pastry chef at Alain Chapel restaurant, then worked as a pastry sous-chef for the Louis XV – Alain Ducasse à l’Hôtel de Paris. In 1996, Alain Ducasse asked him to become the general manager of La Bastide de Moustiers, and later, of all the Alain Ducasse inns including l’Hostellerie de l’Abbaye de la Celle. After 10 years in Provence, Dominique wished to add an international string to his bow and became the general manager of the restaurant Beige Tokyo. He stayed in Japan until 2014. Once back in France, he joined Lasserre in Paris. He finally came back to his first true love in 2016, as the general manager of L’Hostellerie de l’Abbaye de la Celle.
