Brown's Hotel appoints new Executive Chef

Stuart Johnson, General Manager of Brown’s Hotel and Mark Hix, Director of Food have announced the appointment of Lee Kebble as Executive Chef at Brown’s Hotel.  Boasting a wealth of hotel and restaurant experience, Lee has been promoted from his previous position as Head Chef at Brown’s Hotel.  Lee will oversee all culinary offerings for this five star luxury hotel, including HIX Mayfair, The English Tea Room, The Donovan Bar and six private dining rooms.

Lee began his training under the renowned award-winning chef, Anton Edelmann at The Savoy in 1999, where he remained for four years.  Recognised for his impeccable service and dedication in the kitchen, he was awarded Hotel Team Member of the Year in 2001.  While training, Lee also studied at Thames Valley University, graduating in 2003, with an advanced diploma in International Culinary Arts.  

Over the years Lee has gained experience working at some of England’s most prestigious properties including Windsor Castle, where he served a banquet for the King and Queen of Jordan.  Lee then followed his first mentor Anton Edelmann to Brasserie St Quentin where he worked as a Sous Chef.  From there, Lee moved to the role of Junior Sous Chef at one of London’s oldest and most celebrated French restaurants, L’Escargot.  It was there that his creative flair and his passion for cooking with seasonal produce developed.  

Lee’s first encounter with Brown’s Hotel was in 2007 when he joined Mark Hix’s team as a Junior Sous Chef.  His innovation as a chef and his reliability in this role, led to his promotion to Senior Sous Chef in September 2010.  Just two years later, Lee was promoted again to Head Chef, leading a brigade of 24 and running the kitchen which serves HIX Mayfair, The English Tea Room, The Donovan Bar, In Room Dining and Private Dining at Brown’s Hotel.  In this role, Lee has been instrumental in developing an internal chef pathway, increasing staff retention in the kitchen and encouraging career progression for his team.  Notably, Lee was one of the participants selected for the first Master Innholders Inspiring Leaders Programme.
