InterContinental Fiji Golf Resort & Spa has announced the enhanced dining experience at Sanasana Restaurant delivering an authentic Fijian experience every Saturday evening. The dining experience will provide guests with an authentic experience showcasing the local provenance and distinctive destination that is uniquely Fiji.

Sanasana Restaurant’s serene view of Natadola Bay creates an ambient dining atmosphere for couples and families. The culinary team have passionately worked to create an exciting new menu that showcases Fiji’s ingredients and authentic flavours. From sourcing the finest vegetables at Fiji’s own ‘Salad Bowl’ from the Sigatoka Valley to sourcing the freshest meats and seafood from the parts of Fiji renowned for their superior quality.

“We want to enhance the dining experiences of our guests and give them a unique insight of the real Fiji,” says Chef Nicolas De Visch, Executive Chef at the InterContinental Fiji. “Our menus are crafted to tell a story about the dish, yet presented in a way that is a sense of home-coming for all our guests.”

“After consulting two Fiji fusion cuisine experts, we have re-engineered our Saturday buffet dinner - ‘A Taste of Fiji’ – reflecting the heart of Fiji’s flavours prepared with an international flair,” says Chef De Visch.

“The highlight of this menu is definitely Fiji’s seafood such as fresh fish, crabs and prawns. With a strong influence of Fiji’s tropical fruits and paying homage to coconuts and Fiji’s very own Savusavu Fijiana caocao, the pastry team created stunning desserts that are a divine surprise to your palates. This is a very exciting time for us and we look forward to hearing what our guests think of their new Fiji gastronomical journey,” continues Chef De Visch.

“We have also incorporated elements of Fijian culture through live demonstrations and entertainment during the evening so our guests have a truly unique experience,” says Mr Denny Akira Tanaka, Director Dining & Entertainment. “Fiji has such a rich selection of ingredients and it gives the team a great pleasure to create different dishes to stimulate our guests palates and tell them the story of Fiji through our passion in delivering a truly worldly yet local experience.”

Dishes include freshly caught seafood from Fiji’s oceans, vegetables, fruits and herbs grown by local farmers in Sigatoka; the “Salad Bowl of Fiji”, prawns from Navua, pork from Vuda, and chocolate from Savusavu.
