Kabuki Raw opened at the hotel in Spring 2013 and is the most recent addition to Finca Cortesin’s epicurean offerings. The Kabuki Group manages the restaurant and is a world leader in Japanese cuisine, comprising five restaurants and three additional Michelin Stars.
Kabuki Raw specialises in traditional Japanese dishes in their purest form with Mediterranean influences, a nod to Finca Cortesin’s spectacular surroundings. It is the use of the finest raw ingredients, served in a simple, natural, yet exquisite form that gives Kabuki Raw’s gastronomic creations an edge. Fish comes directly from sustainable fisheries in the Straits, while organic produce is picked straight from Finca’s own vegetable gardens. Kabuki Raw, like the Japanese theatre after which it is named, is staged in a spectacular setting allowing guests to view the chefs at work in the open kitchen, enhancing the visionary experience.
The Kabuki Raw menu showcases Japanese favourites with a refined, Spanish twist. These include the likes of Wild Shrimp “Tortilla”, Tuna Belly with Andalusian tomato and toasted bread, Tako Su, seaweed salad with octopus, White fish of the day Tataki with white miso sauce and Japanese mustard, and Mediterranean Slipper Lobster Sashimi, scalded in sake. Warmer seasonal dishes are also on offer, such as Grilled Pigeon with a truffled teriyaki sauce, Wagyu Beef Ribs in teriyaki sauce, and Wild Eel Don Style over white rice with tare sauce. Of course, a wide range of delectable sushi, tartar, sashimi and tatakis are also available.

Finca Cortesin is located in Andalusia, near Sotogrande in the tranquil hills of Casares. Kabuki Raw joins El Jardín de Lutz, led by Chef Lutz Bösing, serving authentic Spanish cuisine with a contemporary edge, as well as Don Giovanni, Finca Cortesin’s fine dining Italian restaurant, led by Chef Andrea Tumbarello. Informal dining can be enjoyed at The Blue Bar serving Spanish tapas, Andalusian afternoon tea and cocktails on the terrace. The 6.000sqm Beach Club, just 1km from the hotel, offers Mediterranean cuisine including seafood and rice dishes, while the Golf Club Restaurant offers al fresco dining with views of the stunning golf course and the sea.
