Caviar Month at The Setai, Miami Beach

For March 2015 The Setai Miami Beach has introduced ‘Caviar Month’ for its guests and visitors to the bar and restaurants. The Caviar Cart by Petrossian is available in The Restaurant and The Setai Grill offering guests the ultimate and luxurious selection of caviar including Tsar Imperial Kaluga, Royal Shassetra Schrencki, Hackleback to name a few, all of which can be paired with Champagne or exclusive vodkas.

The hotel’s mixologist have also created an exciting and lively menu of unique cocktails to tie in with Caviar Month, although actual caviar isn’t used in the recipes, a direct spherification process is used to create caviar sized spheres that pop in the mouth with an intense burst of flavour, a technique that was pioneered by Ferran Adrià at el Bulli in 2003, who spherified melon juice to give it the appearance and texture of caviar.

The cocktails include the Elegant Double Beet, complete with Grand mariner 100 year Anniversary, Boulevader with golden raspberry caviar and the Golden Crane with saffron shrub.
