Matt Whiley 's Peg + Patriot opens at Town Hall Hotel

The wait is finally over as Matt Whiley opens his new Peg + Patriot bar at Town Hall Hotel. Matt’s infamous creativity is evident throughout the bar with his innovative cocktails, house spirits created on site and carefully sourced spirits from small producers around the world. 

The bar is making three different styles of gin on site, including a recently launched product Moonshine Kid Dog’s Nose, a hop gin, as well as a Lisle Street Gin (jasmine and currant).  Matt will also be producing all his own house vodkas, liqueurs and vermouths. 

The cocktail menu features items unique to the bar, including the Salt Beef Sazerac - salt beef beigal cognac/ absinthe / sugar and bitters - and Marmite Vodka Martini - P+P Marmite vodka served wet with house made dry vermouth. Food comes from the hotel’s Executive Chef Lee Westcott, carefully compiled to compliment the eclectic drinks menu.

With a nod towards the grandeur and opulence of the original Town Hall building, the design for Peg + Patriot, by Ariana Rees Roberts and Lucinda Johnson, is simple and understated with a pared back aesthetic, allowing the main focus to remain on the bartenders behind the bar.

The bar is named after it’s location on Patriot Square and “Peg” being an old English word for a shot of liquor.
