The By Rosemary Shrager menu, which launches at the end of January, includes a series of dishes created especially by Rosemary, her executive chef John Rogers and Flemings’ head chef Brian Henry. The menu, which will form part of the existing a la carte offering at The Grill, will be updated seasonally throughout the year.
Rosemary, John and Brian developed the dishes at Rosemary’s cookery school in Royal Tunbridge Wells and following a taster session with the Flemings’ team, the final twelve dishes were decided upon. These include a Gratin of Smoked Haddock with Leeks and Toasted Brioche, Pigs Cheek with Pomme Puree, Red Cabbage and Cider Jus and a Prune Frangipane for the Spring menu.

The Haddock Gratin starter is my absolute favourite as it uses my very own Brioche recipe, and the pairing of it with the fish is to die for! All the dishes are of the highest quality, so fit perfectly with Flemings Mayfair and the premium dining experience it offers its guests.”
Rosemary is self-taught and has worked with chef luminaries including Marco Pierre White, Pierre Koffmann and Jean-Christophe Novelli. She has also appeared on popular TV programmes such as Ladette to Lady, Soapstar Superchef and The Alan Titchmarsh Show, and recently came sixth on ‘I’m A Celebrity Get Me Out Of Here’ 2012. Her latest book Rosemary Shrager’s Bakes, Cakes & Puddings is published in March.
The Rosemary Shrager Cookery School opened in May 2013. The School is located in The Lower Pantiles, Royal Tunbridge Wells.
