Internationally acclaimed restaurateurs set for Amsterdam debutWaldorf Astoria Hotels & Resorts is further enhancing its unique culinary experiences thanks to an exclusive partnership with internationally acclaimed restaurateurs Jonnie and Thérèse Boer. The pair, owners of 3-Michelin star restaurant De Librije in Zwolle and the 2-star restaurant Librije’s Zusje, will take on responsibility for all drinking and dining options at Waldorf Astoria Amsterdam, which opens in April 2014.
Sidney Schutte, former chef at Librije, has returned from Asia to take on the new role of executive chef at Waldorf Astoria Amsterdam, which with its stunning canal side setting in historic Herengracht is to become one of Holland’s latest luxury hotels. The announcement follows intensified efforts by Hilton Worldwide and its restaurant development team to build on its success in developing significant restaurant partnerships.
John Vanderslice, global head of luxury & lifestyle brands, Hilton Worldwide, said, “We are immensely proud that the owners of De Librije, with their exceptional reputation and accomplishments in gastronomy and hospitality, are joining in partnership with Waldorf Astoria Amsterdam. By having Sidney Schutte as chef, combined with De Librije’s approach, we will be able to deliver a distinctive take on The True Waldorf Service and provide every single guest with a unique experience.”
The drinking and dining facilities at Waldorf Astoria Amsterdam will include a gastronomic restaurant alongside signature bar Peacock Alley, Vault Bar and The Maurer Room, plus exclusive banqueting facilities. More details of how De Librije will add its famous, distinguished culinary signature to the Waldorf Astoria Amsterdam will be confirmed over the months ahead.
Thérèse Boer, the joint founder, owner and hostess of De Librije, said, “When this opportunity came up, we jumped at it. We had said in the past that expansion into Amsterdam was not out of the question if the right chance presented itself. We hadn’t even dreamt it could have been the Waldorf Astoria. Spreading our wings together with Sidney Schutte, thanks to this world-famous hotel brand and at this exclusive location in Amsterdam, is a tremendous challenge for us. We really believe in this partnership and are going to work with all our ambition and enthusiasm to give every guest at the Waldorf Astoria Amsterdam an unforgettable gastronomic and hospitable experience, in the well-known tradition of De Librije.”
Roberto Payer, general manager of Waldorf Astoria Amsterdam, added, “I have been a great admirer of Jonnie and Thérèse Boer and have huge respect for their outstanding achievements, both individually in their own fields as chef and sommelier/hostess and together as a couple. They have their very own style and stick to it consistently. That is something I value very highly and I am so thrilled and delighted that we will have their ideas behind the mark we are going to make on the culinary world in Amsterdam.”
Featuring 93 luxury guestrooms and suites, the new elegant and sophisticated Waldorf Astoria Amsterdam is a perfect addition to the city’s luxury offerings. Steeped in history, the property is set on the banks of Amsterdam’s grandest canal, the Herengracht, built during the Golden Age. Boasting a historical exterior comprising six original patrician houses of the 17th and 18th century, it is the only top luxury hotel within the monumental canal side, from which to explore the vibrant city.
