Originating from Normandy, this multi-awarded chef began his career at Relais Louis XIII (two Michelin stars) as second chef then moved to the famous Tour D’Argent (three Michelin stars) from 1988 to 1993. This is where he met Michel de Mattéis, Royal Palm’s Executive Chef and worked with him for three years.
In 2003 he was approached by the Four Season Group to launch their Terre Blanche resort in the Var. As their Executive Chef he oversaw all operations for the five restaurants including the gastronomic Le Faventia (first Michelin star in 2005 and second Michelin star in 2009) until 2010.
