Restaurant One Eighty wins AA Rosette Award

Restaurant One Eighty at Cheshire’s BEST WESTERN PLUS Pinewood on Wilmslow Hotel, can count itself in the top ten per cent of restaurants in the UK after winning a coveted AA Rosette. The award comes less than six months after opening under the care of executive head chef, Colin Starkey, whose menus bring a modern twist to traditional recipes, with a focus on seasonal produce and local suppliers.

The contemporary restaurant, which offers a 180 degree view of the Hotel’s beautiful gardens, was praised by AA inspector, Andrew Ford for a dining experience which was the highlight of his stay. He was particularly impressed with Chef Colin Starkey’s signature Artic Roll with cherries about which he commented in his report: “It was a throwback to the good old days, a very well made dessert, accurate yet simple, great flavours and textures, wonderful smoked cherries.”  

Chef Colin Starkey said: ‘I’m delighted with the award, which recognises the hard work the team has put in since opening in April. It was also great to hear that the inspector shared my appreciation for traditional foods presented in a fun and contemporary style. I owe much of my inspiration to my mother and grandmother’s passion for food and many of their wonderful dishes have found their way onto my menus. I have learned that simplicity in cooking is the best policy. The key for me is quality, fresh ingredients combined to bring out the best flavours.’  

The AA Rosette scheme is awarded to restaurants that use high quality, fresh, seasonal ingredients and show evidence of homemade desserts, stocks and sauces. The inspectors judge how well a chef manages to apply advanced technique and culinary skill, while retaining maximum clarity of flavors, and serving food at the correct temperature. Approximately ten per cent of restaurants across the UK meet these high standards.  

The majority of suppliers to One Eighty are located within 40 miles of the chef’s table, and the six course tasting menu therefore changes regularly to accommodate seasonal variation in availability of produce. Those enjoying a specific dietary plan, such as gluten free, vegan and vegetarian need not miss out because, with a little advance notice, chef offers the One Eighty season’s menu to meet your needs. 

The One Eighty a la Carte menu also offers excellent grill dishes, Sunday roasts, sharing platters and the ‘old meets new’ range of traditional desserts. For children, smaller sized portions of the One Eighty a la carte menu are available.
